This is my go to lunch.! I make a big container at the beginning of a week and it usually lasts me 4-5 days. I measure everything with my heart so the amounts listed in the recipe are just rough guidelines. Cook quinoa according the package instructions. Let quinoa cool down completely. Chop apples and onions. Add shredded spinach, apples, onion, feta, almonds, craisins and any other desired ingredients to quinoa. Make dressing by combining olive oil, honey, lemon juice, garlic, Dijon mustard, and salt and pepper to taste and shaking or stirring well. Combine all together and shake well, and store in air tight container.
