Preheat oven to 325 with a rack 1/3 from the top.
In a large mixing bowl, combine all dry ingredients except coconut flakes.
In a small bowl, whisk together egg white, honey, and vanilla.
Drizzle the egg white honey mixture onto the dry mixture and mix until evenly coated.
Spray a jelly roll pan with olive oil or another neutral oil.
Dump the granola mixture onto the jelly roll pan and press down firmly until it covers about 3/4 of the pan.
Spray with olive oil so that granola will crisp in the oven.
Cook granola for 15 minutes, then remove and sprinkle coconut on top and press in firmly with a spoon as the granola will be hot. Bake for an additional 10 to 12 minutes. Keep a close eye on the browning so that it does not get over baked. When done, entire granola should be a nice golden brown.
Let cool and then break apart. Store in an airtight container for up to 5 days.
Great on yogurt or as a cereal.
