You can make this recipe with whatever you have on hand! Start by preparing your tofu. I like to slice it, press it between paper towels, and then marinate in soy sauce for 30 minutes. You can then toss in cornstarch and bake or fry it in a pan. As the tofu is cooking, prepare your rice (or quinoa/farro) for the base. Next, fry up whatever vegetables you have on hand. When you are making the sauce, make sure you put the peanut butter and soy sauce in a large bowl to avoid splashing, you really have to whisk it to bring the mixture together. Simply mix all the ingredients for the sauce together and chop up some peanuts for the top. The sauce is also flexible, you need peanut butter, soy sauce, and rice vinegar at a minimum, anything else just enhances the flavor.
